   Wonderful evening with delicious food and perfect drinks. Loved the oysters, and heirloom tomato salad to begin our meal. Shared the smoked fillet and Brussels spouts and finished the evening with the caramel apple French toast. We will be coming back.

   Overall the service and food was outstanding however I found my $69 Sous Vide steak tasteless. Yes the steak was the perfect level of being done to my liking but so much more is critical to a good steak than just temperature.

   I've been to the republic many times and every time is always a pleasant experience given the knowledge of the servers, the excellent menu, and solid food. The only issue the last time was the quality of my party's steaks. One was severely under-cooked, and in the case of my NY strip, a huge portion of it ended up being silver skin and grizzle. Otherwise, an amazing experience and of the 6 times I've been here, this is the only time I've had an issue come up.

    Outstanding food. The cuts of meat were all very tender. The food was seasoned perfectly. The steaks were lightly crusted. We ordered three different steaks all cooked at medium. One of the steaks was undercooked and was closer to medium rare ( plates had excessive blood on it indicating a steak cooked more closely to medium rare). The sides were all amazing (asparagus, fries, and Mac n cheese). The dessert, Apple French toast was amazing as well. The bread was lightly crusted, the apples were glazed perfectly, and the pecans and light caramel drizzle added a sweet and flavorful finish. We will definitely dine here again.
