The casual, yet attentive atmosphere is the perfect place to spend a special evening, be it to relax with friends or entertain business associates. Our banquet facilities can accommodate large groups with the quiet proficiency and superior quality that has become the hallmark of The Boulder Cork. The food is an impressive display of creativity and variety, masterminded by the chef, Jim Smailer. Chef Smailer has created an enticing offering of steaks, prime rib, chicken, pasta, and fresh fish selections; all on the cutting edge of culinary delight. The food is as fresh as the market allows. Please join us at 740 Front in Historic Downtown Louisville. Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar.
The bar offers a selection of craft beers, wines, handcrafted cocktails and an extensive craft bourbon selection.

I loved the potato skins and the trout. The gluten free chocolate torte could have been better, but the coffee was outstanding. My friend enjoyed the steak frites. She said the steak was very tender. I would have preferred the main restaurant, but we couldn't get a reservation at the time we wanted. The Boulderado is very popular, so you have to make reservations far in advance for holidays, especially for the mezzanine.
