Santa Fe
About the restaurant
Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

This was our first visit to Sazon and it certainly will not be our last. The food, ambiance and service was unparalleled. We had the duck breast and the lamb chops - cooked to perfection and the accompanying moles and sides were delicious.

We live in Santa Fe and this was our first visit in a while. Sometimes resorts don’t do much to bring locals back. That was not our experience. Our server was fantastic. Very helpful with the menu and wine. She knew we were locals and did everything to make us feel welcome. The food was excellent. Because of this experience we’re putting Terra on our regular rotation.

Last night I took my daughter to dinner on a date to celebrate her 20th birthday. We sat in the President's Room and listened to Doug Montgomery play piano. It was delightful with the Fondue as our appetizer as a wonderful sharing appetizer. I ordered the Elk Loin and it was the best I have ever had cooked medium to perfection. I'm so grateful Rio Chama is here in Santa Fe. One of my top restaurants. Doug's piano playing was a delight! My daughter and I had a blast. Thank you Rio Chama.

Had the steak frites with chimichurri- was prepared perfectly, tender and flavorful. Very generous serving of the frites- which is good because it's why we all get the steak frites, after all! Jimmy was playing so a good time was had by all!
