Kō, which translates to sugarcane in Hawaiian, is inspired by the sugarcane plantation era, a time when people from around the world came to the Hawaiian Islands to work in the sugarcane fields. The plantation workers brought recipes and cooking techniques from home, while utilizing the ingredients available to them in the islands. This culinary evolution eventually developed into what is now considered modern Hawaiian cuisine.

In 2012, Kō's concept was brought to life by the esteemed Chef Tylun Pang. Chef Pang passionately led and developed Kō into a cultural melting pot that best represents Hawaiian-style cuisine. The expansive menu features island family recipes that have been passed down for generations - including Hawaiian, Chinese, Filipino, Portuguese, Korean, and Japanese favorites.

    Ko was the best dining experience yet we had the pleasure of enjoying in Maui. Any bad review is either clearly the competition or someone not in their right mind. Christina our server was outstanding and the service was top notch. I appreciate their attentiveness but privacy during our romantic dinner The Lavender shrimp was the best crusted shrimp I've ever had and I'm usually not a shrimp lover. I loved it so much I went with their surf and turf noodle dish. I have never had noodles so good it felt like I was being gatekept from my whole life. My wife's lamb special was fall off the bone and couldn't be more flavorful. The drinks were delicious too, the Mai Tais and Liliko' i margaritas were outstanding. All wrapped up in a beautiful sunset by the pool on the ocean side of the grand Fairmont. Would highly recommend and will be absolutely returning.

    Beautiful place, staff /service was amazing! Food was so good and the portions were great/reasonable. They had a kids menu and worked around it. I recommend , won’t be disappointed.

    The food was excellent. The service was professional and gracious. Despite booking far enough in advance that every possible time slot was available, calling to note the birthday and table request, and even confirming in person with a host the day before, we were seated outside the main dining room—next to the hotel's restrooms staring into it's hallway. I understand there is never a guarantee. I was surprised to be spending the evening in an overflow area with empty tables watching other diners enjoy the view, the ambience, the architecture and the experience. After a week of walking past Ko, I still don’t know what it feels like to sit inside. I brought my Korean family to a Korean restaurant for something meaningful. I expressed my disappointment immediately. I got a blank stare. Whatever it takes to be seated inside at Ko, it clearly isn’t worth it
