Authentic Central Texas Barbecue featuring the Texas Trinity - Brisket, Ribs, Sausage. Great craft cocktails including our famous Smoked Orange Old Fashioned. Incredibly good desserts like Peach Cobbler and Pecan Pie. Super delicious Breakfast Tacos. It's like taking a trip to Texas the minute you walk in the door.

Owner Jack Timmons grew up in Texas and has lived in Seattle for the last 2 decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak and mesquite and started the Seattle Brisket Experience. After a year+ of practicing the art of barbecue, and serving succulent smoked meats to thousands of Northwest BBQ fans at BBQ raves, Jack opened a restaurant in the SoDo region of Seattle in 2014 to bring Central Texas BBQ to the people of Seattle and the Puget Sound region!     Quality of the meat was excellent, and the brisket was particularly good. Service was attentive and friendly. We got a deal on the steak and 2 sides for $29.00, which was a great value.

    Our server Henry was amazing! And THE Jack himself cooked our steaks and they were the best steaks I've had in a long time! We will be returning again!

    First timers, loved the big feel atmosphere of the dining room, very casual and friendly staff. Not too noisy (5-6pm Friday) just a good vibe and great eats. We will be back.

    Jack’s is our go to place for all things BBQ! The ribs are fantastic. The chili sin frijoles is the best! Service is usually very good, but it may take a few minutes for the food to arrive, but no worries, it’s worth the wait!
