   Really great, small, but powerful grill. I had my doubts about this restaurant, but was pleasantly suprised. Outside and inside of building was modest looking. Hosts and server were very nice and friendly. Dim lighting on Valentines Day with a candle and rose on the table added to the experience and mood. Good sized menu considering the size of the grill, and the price for food quality was great! Tip well, they deserve it.

   We had a wonderful Valentine’s Day dinner here. Our server, Ian, did an excellent job. He was attentive without being obtrusive. The room was decorated with holiday lights and while there was music and conversation at other tables, we could enjoy each other’s company and talk easily. Finally, the specialized menu gave us delicious options without having an overwhelming amount of choices. I had the duck fried rice and french onion soup and my wife had the steak medallions. I drank the Beetlejuice cocktail which had two hearts decorated into the foam on top. Overall a wonderful experience.

   Our first visit was on Valentine’s Day 2025. We opted for the preset four course v-day menu and the food presentation and quality did not disappoint. We very impressed that such a new restaurant was on this level. I noticed that all the staff worked together. We look forwards to trying things on the regular menu.

   Food was delicious! We had the Baked Brie that had a sweet apple/nut topping. The citrus salad was refreshing. One of us got the duck fried rice. That dish was very good, a little heavy on salt, but had a lot of duck. Very reasonable price. The Chicken wrap was delish. The homemade fries were crispy and hot. The sauce for the fries was a little strong, but good in moderation. The service was top tier! Ian was very personable, knowledgeable about the food and the restaurant, and attentive. For it being Valentine’s Day and very busy he did great!

   First time at Gypsum for a weekend dinner. Place was packed. That’s always a good sign. I got the steak medallions and my wife had the bolognese. We had the Apple Brie as an appetizer. Everything was delicious. Despite being busy, the service was excellent. Lexie and Ella were fun, attentive, and knowledgeable servers. They made the experience fun and enjoyable. The head chef and manager, Zach, also stopped by to make sure everything was just right. The full restaurant was noisy but we could still hold a conversation. We’ll be back!

   We were in the “overflow” and the manager Zack was our waiter. He was friendly, informative and efficient. The food was tasty and it was delivered quickly, especially since it was New Year’s Eve. We had the sticky shrimp and it was yummy! Our only issue was that we were cold in the overflow. The fire was burning but we were too far away to feel the warmth. Will definitely be back!

   There are still some bumps to work out as this restaurant finds its footing, especially with server to table ratio and wait times between server visits to the table, but the management was attentive and apologetic where necessary and the food and craft cocktails were very good. Will give it another try!

    I would go there again and again it was delicious! The fire was great and the service was a smash hit! Get the cod!!!
