Carbone is Chef Mario Carbone’s homage to the great Italian American restaurants of mid-20th century in New York, where delicious, exceptionally well-prepared food was served in settings that were simultaneously elegant, comfortable and unpretentious. His food captures the essence of that history but takes its culinary cues from the kitchens of his childhood, the great talents with whom he worked throughout his early career and incorporates his signature techniques that blend familiar and bold flavors to create the most craveable dishes. We call this Carbone Italian.

The tomato bread was good and a nice beginning to the dinner. The prosciutto and mozzarella were plain, the meatballs were blah, the zucchini appetizer was pretty good, but we didn’t really care about it. However, the highlight was the spicy vodka rigatoni. That is the only reason I would ever go back, but I don’t care about pasta that much to make a special trip to Carbone Dallas again. The thing that really upset us was the tiramisu dessert. They don’t soak the lady fingers in espresso as they should. Instead, they soak it in some really vile Marsala wine which is incomprehensible. It was inedible, and I specifically told the server that tiramisu is my favorite dessert. Why is this happening? I defy anyone to eat more than one bite of this dessert here. Needless to say, they took it off the bill. Overall, it was a major disappointment. No thank you.

This experience was a low point in our visit to Dallas. The physical restaurant is like eating in a parking garage. They served a $80 glass of champagne in a wine glass. “We do not have any champagne glasses on campus.” Did not know Carbone was on a campus. The baked oysters were soaked in so much butter it would make you sick. The service was theatrical and heavy handed. This is not the NYC Carbone. It is a distant lazy cousin at best. Run.

It was a very cool experience. However, we tried the truffle burrata and were unaware of the price. I understand the norms when eating at a nice restaurant, but was completely shocked at the bill when I was charged $160 for a very small appetizer. If I had known, I wouldn’t have purchased that dish simply because I cannot afford to be doing that. However, I wouldn’t turn people from dining here. I am a college student so I hope people can understand my concern for spending a lot of money on an appetizer. Besides unknowingly purchasing this expensive of a product, the waiter was very helpful and engaging which is why I strayed from arguing. All in all, it is a wonderful restaurant just not for your average college student.
