Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

    Had a great dinner at Bacan. Presentation, service, and food quality were all noteworthy. All of the sauces were superb. Would recommend the grilled octopus, snapper, pork chop and banana dessert; all were excellent.

    Haven’t been to Bacan in a number of months…still great! Energetic but our evening was nicely paced. Courtney has taken care of us every time we have dined at Bacan and she is awesome. Jay is usually with her and is just as great. They make recommendations and are always spot on! A new member of the team is Landon, part of the leadership team. We know him from his former restaurant in Winter Park and it was good to reconnect with someone who has good customer experience as rule one. The food is so good! A new item is the Serrano ham and cheese croquettes. Wow!! Our second course was the delicious lobster tostada, a favorite. We shared the reimagined pork belly which was very good. The banana flambé finished our evening. Was good to be back. Had a great experience and look forward to our next dining visit.

    The food was tender and flavorable. However the carrot salad was a huge disappointment - expensive for very little food. One unexpected treat was the plaintain appetizer with guava sauce sent over to us by the chef. One drawback is that we were seated not far from a door to the outside. Every time it opened, we felt a cool breeze. The decor is very nicely done.

    This was a great experience. Cost for two was significantly more than Linda’s La Cantina or Bosphorous type brand and the bougie ambiance was ever present

    We had an incredible dinner at Bacán! The service was absolutely perfect and every dish was impeccable. Get the hamachi, we ordered a second one. It’s THAT good.

    Very nice restaurant. The host was friendly & attentive. The server did an outstanding job, she (Cloud) was very friendly and hospitable. Even the food runners and the guy that picks up the dishes were very nice. They are on their way to a michelin star!

    So, this is a review of two dining experiences- Friday night and Sunday night. Amazing. We made the second reservation after the first dinner. Best octopus I have ever had. Approachable cocktails, bright piquant flavors, and the staff is exceptionally friendly and courteous. Chef Mike and team, bravo! You made our weekend getaway by surprising us with an incredible dining experience.
