Featuring Chef Nobu Matsuhisa’s signature new-style Japanese cuisine, Matsuhisa Vail is located in the Solaris Plaza in the heart of Vail Village. Our dining room is open from 5pm nightly. Takeout available nightly from 5-9 pm.

Chef Nobu Matsuhisa’s fusion cuisine draws influence from his classical training in Tokyo and his life abroad in Peru, Argentina, and around the world, showcasing signature dishes such as Yellowtail Sashimi with Jalapeño, Black Cod Miso and White fish Tiradito.

Going to Matsuhisa is always a fun experience. This time my 4 guests and myself were all very disappointed with the service. Every one of us felt our waiter was trying to rush us out the door. During each course he would come by (while we were eating) and ask us for the next course. It was downright obnoxious. We will be back but next time we will not let the waiter ruin our fun.

The food and drinks were amazing as always. Special shout out to Baron the bartender who made some great suggestions for off-menu items that were just unbelievable. Great cocktails as always.

Nobu never fails to impress. As usual the food was impeccable and the service amazing. They are very well informed about food allergies, and are always able to accommodate my food to eat gluten free safely.

An absolute must try! Very welcoming from the minute you walk in the door. Our server was amazing. She made several suggestions, that we accepted, and was spot on! The food presentation was creative and the food delicious!
