Chef was working the dining rooms last night—first time I’d seen him without his cowboy hat. There are dishes and flavors that can be found nowhere else in the United States. We’re from Texas and we know a bit about mole. No one matches the depths of flavors he is able to achieve. Trust your server—there are a couple of dishes that should be mandatory—Chef’s soup and his special dessert; your server will guide you. This is super-fine dining. Expect to spend several hours over dinner—it’s not fast food. Service is excellent and the rooms are beautiful. Plus, it’s not cheap. It was such an enjoyable evening. Thank you and see you again! Oh and can I just say the guy who manages the valet parking is SO nice, expeditious in service, and we always look forward to seeing him. We were greeted warmly, shown our table, and, because we indicated it was our anniversary, were bright two glasses of champagne and addressed by name by our waiter, Parris. He truly knows how to provide table service! He made excellent recommendations and made sure our experience was top notch.
