Sal was an original, one of a kind. He brought us the art of Italian food that dates back to the “old country”, and we’re honored to carry on his tradition. Sal grew up in a small town in Sicily, where he spent years helping his mother in the kitchen. In the 1960’s he began his American journey, working under a chef on Long Island, where, according to Sal, he learned a few tricks. Sal would soon carry his old country Italian tradition, mixed with some New York flare, to Middle Tennessee. By this time, he had Italian food and classic New York style pizza down to an art. Sal was an authentic, never compromising on quality, freshness, or passion. Here at Sal’s we are carrying on his legacy in everything from our made daily dough, to our homemade sauces. The standards that we love from Nashville location are available at Etch in Franklin- Roasted Cauliflower, Argentinian Beef Tenderloin. We ordered the tempura mushrooms which were a generous portion but we found to be a bit greasy. We loved the Smoked Potato Salmon Bowl with the perfect jammy shoyu egg! The Pavlova with pear sorbet and tangerine marmalade was a divine way to end our meal. The service was excellent!!

Cork and Cow is, in a word, extraordinary, Their steaks ( I had filet) are so delicious, quite possibly the most flavorful, buttery soft beef I have ever had.) carrots side dish incredible!!! And the Thai yellow curry soup with a bit of jasmine rice and lobster was out of this world delicious Waiter Mike a joy Congrats on always getting it right and we will continue to go to C&C when we return next year to Franklin. Thank you for a WONDERFUL experience.
