The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began. Zacatlán Restaurant desires to continue to preserve the traditions for our upcoming generations, while bringing forth new flavors. These new flavors incorporate Southwestern and Mexican influences. Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    We were celebrating our daughter’s engagement and had a fantastic meal. I had a swordfish special that was phenomenal. Everyone else really enjoyed their meals, and the service was fantastic!

    First time dining here, but won't be our last. We were very pleased with the whole dining experience. Nice quaint atmosphere, great service, good wine/ drink options, and the food was fantastic. The crab cakes were excellent, as was the mushroom soup, and I had a filet as good as any top restaurant. We were too full for dessert, but will try next time. The other reviews are correct- give Dinner for Two a try!

    The service is very good from the moment we arrived. Seating in the lounge was comfortable. Our waiter named Dan introduced himself and was pleasant and upbeat. The menu is very interesting and that gave each of us excitement about what to select. We had oysters, polenta, sweet beet salad, steak, scallops, sweet squash, seafood variety on rice, and flan with rum-flavored cream and chocolate mousse favored cake with salt favored caramel ice cream. All of the food was creatively prepared and presented. We were greeted cheerfully by the hostess and thanked by everyone for having dinner there. We expected excellent food, drinks and service, and that’s what the Palace Prime experience was for us tonight. We look forward to another wonderful dinning experience there! Clayton Tanga, Santa Fe
