Our server suggested we order 5 starters and two entrees for the 3 of us which felt like upselling. We got 3 starters and 2 skewers and the 2nd skewer was more than we needed. The menu prices are, like all restaurants in LA since the pandemic, dizzyingly, insanely high. Of the starters, the celery root was exceptional. The two skewers were delicious but, at the end of the day, they are undressed flame-cooked meat. We can make that at home. It’s expensive but worth every penny, especially as the restaurant is pretty generous with the portions. The Pane with pistachios and ricotta is amazing along with the the broccolini caesar salad. The uni pasta is simple and elegant, and one of the best i’ve had, especially topped with grade A uni. Don’t skip dessert and take any digestifif offered. $350 for 2 people. There are so many "fancy" restaurants in Los Angeles where the food is disappointing, but this was not one of them. Having known about Republique for many years and seeing it on many "best" lists I was prepared to be disappointed, but it met my expectations. My parents and I were very pleased with our meal, the service, and the ambience which is beautiful.
