Our signature dish is a bone-in beef rib that is sous-vide before grilling over an open wood fire and finished with rendered bone-marrow. We are a high-low, fine-casual concept making simple, seasonal American cuisine inspired by the culinary traditions of Italy, France, & Spain. Expect to see dishes that you are used to seeing at fancy restaurants & some you would typically find at a drive-thru or dive bar. but they all are served on a plate from Goodwill. Our menus are ever-changing, not just by the season but by the day. we embrace change, creativity & inspiration every chance we get.For groups of 2 people, we recommend ordering 4-6 dishes from the three sections of the menu (depending on how hungry you are!). for example - 2 snacks, 1 small share plate, & 1 large share plate.The food is designed to be enjoyed family-style.     An amazing evening. Ambiance was good…wood burning fireplace next to table. Drinks were generous and tasty. Interesting as well. Service good. Food was Delicious! We will be going back and soon. Really hope no one else discovers this place.

    We’ve been to Roe 5x since they opened. Their food is consistently high quality! The crab and shrimp were absolutely superb. The reuben coquettes were also good although I can see the taste becoming a bit overbearing after a few bites. Squash was much better than expected. The albacore crudo was very fresh and the scallops were also quite good, except I thought the fresno chile hid the flavor of the scallops imho. Bavette, Roe burger, and black cod were tasty and prepared perfectly. Service is always superb. So happy they’re here in Bellingham!!!!!

    What an experience, I'm super happy that I chose here for their special Thanksgiving dinner. The food was delicious, the drinks were yummy, the staff was professional and very friendly, and the atmosphere of not just the dining room but the hotel itself is exceptional. Awesome experience all around.
