In March of 2013 renowned vegan Chef Tal Ronnen opened Crossroads at the corner of Melrose and Sweetzer in Los Angeles. Top grade Midwestern beef is aged for 21 days at 37 degrees Fahrenheit & 67 percent relative humidity.
