Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Tucked away on Main Street in Bothell, a walkable neighborhood teaming with local art, culture and food, the artfully handcrafted krō bär has been reclaimed from the bones of Bothell’s historic hardware store in the Mohn building.     Dinner was absolutely fantastic! We started with the meatball plate then had the bolognese and Sunday gravy for dinner. We heard the portions were generous but holy cannoli they are HUGE! The bolognese was easily the largest portion I've ever had at an Italian restaurant and triple the size of Pink Doors portion. The Sunday gravy was not just in a bowl, this was the size of a punch bowl. My husband couldn't even finish half of it. Considering the quality of the food with the portion size and the price point our dinner was phenomenal. We have found our new fav Italian restaurant and are truly looking forward to visiting again.

    Carmine’s is one of the best food experiences we have had in awhile! Service was exceptional, the lobster pasta special was a dream, the fillet with gnocchi was lovely. And the bread pudding was amazing. Thank you for a great evening. We will be back!

    We went on Christmas Eve. The food was delicious, we liked everything we ordered. Even the frite dipping sauce was amazing. Service was friendly and prompt. We ended up not sitting outside, but if you do, it seemed pretty chilly out there.

    Christmas Eve prix fix menu exceeded our expectations. Every course we'll prepared and tasty Service excellent. Lodge decorated nicely inside and out, but restaurant devoid of decor, a tiny bit of a letdown

    We love Jack’s. It’s true Texas barbque that always delivers. We tried the steaks and Cesar and they were delicious. We’ve also taken their smoking classes and they are well worth the time!
