The people who work there have a beautiful balance of knowing they are lucky to be part of that legacy but equally that they are what makes it so great. Brilliant staff. Brilliant food. This is a very welcome change as you are able to craft your own unique experience at the restaurant. The food coming from this very well-oiled kitchen is exquisite, technically proficient and incredibly interesting. The service is casually perfect, with all the hospitality and technical knowledge one would expect from a 2 star restaurant without the formality and stuffiness that often accompanies those accolades. The wine list is endlessly fascinating with bottles from regions that will surprise and delight even a novice oenophile.
