I had put notes on the online reservation that it was mom's birthday and that we would like to be seated next to the window in the rotating section. Our server, Faith, did an outstanding job of recommending appetizers and entrees. We had the hallumi cheese and the crab cakes appetizers and the salmon entrees. Everything we ordered was prepared to perfection. I asked for the salmon well done and crispy on the outside and it was FANTASTIC. Mom got the key lime tart as her birthday surprise with a candle and happy birthday written in a chocolate piece ontop!!! I got the chocolate cake. The key lime tart was better than any we had in Florida!!!. The cake was decadant and the size of the entire plate. Faith has the best customer service skills and was very attentive and engaging. Honestly she made our night so enjoyable, along with the spectacular view of Louisville sunset and Ohio river and OFCOURSE the DELICIOUS cuisine. The other servers that took our empty plates and refilled our drinks were so attentive as well. From the cocktails and the spot-on assortment of wines-by-the-glass, the calamari and tuna tartare, to the fish main courses and creative desserts - everything was perfectly prepared and presented. We are a picky bunch when it comes to dining out, as we cook at home at a high level. Seviche delivered on all accounts. Had a nice Christmas lunch with a girlfriend. Cocktails and the shrimp salad were light and refreshing. Warmed up with the lentil soup. We were in a small room with a groups of ladies having a birthday lunch. So it was loud, but that’s to be expected. Routinely, we had our anniversary dinner at Swizzle. However, when we were unsuccessfully at securing a reservation at Swizzle, our search for an alternate led us to Proof on Main-we are glad we did! Not only were we able to get a last minute reservation on X-mas eve, but it wasn't packed, adding to the intimate ambience we were hoping to experience. Our waiter, was not only knowledgeable, but he was verry attentive and detailed with his recommendations; which were spot-on.
