My favorite place in Querétaro for novel Mexican food for 14 years. The care in the preparation technique and the innovative mix of traditional ingredients, along with the seasoning, atmosphere and service are always first class. On this occasion the evening began with some sausage sopes, continued with a shrimp broth, pink mole salmon and brisket tacos; all accompanied by a Monte Xanic Chenin Colombard grape whose fresh acidity, soft attack in the mouth, structure and citrus aromas complemented the dinner very well The surprise of the night was that the responsibility of such a complex cuisine is in the hands of Alejandra, a young 22-year-old chef who is up to the challenge.
