   Our two orders of pork chops ordered by two people came out raw or very undercooked. Had to send back twice to get it cooked properly. Manager did not seem to care. Said it was above his pay grade and it was the waitresses fault.

   C’mon Fred…. That’s not what really happened. Tell the truth… you wanted your double cut thick chop well done but neglected to mention it to your server before ordering and receiving a normal smoked grilled medium plus chop. We accommodated by cooking more after you complained to server and manager. Then you complained again after cooked more wanting more well done a 2nd time. Then a 3rd time you complained to management it was now TOO well done. Next, you demanded the chop off your check and were given a free chopped liver appetizer by management. You eventually only paid 2 dinners for 3 people. Be advised any further comments should be directed to the owner personally from here on out. Mr Carson can be reached directly at 773-310-1000. His name and number are on every menu and website.

   Steak was fatty, salty, but without flavor. Ribs were more oven baked than bbq. Pork chop was large but without flavor. I think some seasonings would make the meat taste 100% better.

   Hi Larry. We reviewed your check and see 2 x 28 oz Bone in Charcrusted Ribeyes Med Rare. Carson’s only serves highest quality Prime and Black Angus. Ribeyes are properly intended to contain more marbling than other cuts by design. Charcrusted chargrilling locks in natural meat flavors and juice. Random spices or seasonings are generally used in low grade meat to mask inferior quality (we don’t do). Due to marbling, and per USDA, ribeyes are best served internally 145+ (Medium+) to break down fatty marble. As a suggestion, you may prefer 145+ on ribeye (not Med Rare) to achieve full flavor (or filet or NY strip cut if prefer Medium Rare). Finally, Carson’s Babyback ribs are never oven baked or boiled. They’re slow smoked in Giant Southern Pride Smokers which we welcome you to see anytime.

   Overall dinner was good because of great dining companions. Food, from apps to entrees and sides, was good and our server was attentive and friendly. On this night, they had run out of brisket (by 7:30 pm) and it is only available in sandwich form. Just two other things to note, it was very loud/noisy in the dining room and it was odd for an automatic 18% gratuity to be added when we were only a party of 4.

   Hello Dan. Thank you for your compliments about service and food. We only serve FRESH brisket daily and estimate the amount to slow smoked brisket hours in advance of each day which is served until we run out. Unfortunately on the busy Saturday night you dined with us, we had way more orders on fresh smoked brisket orders than anticipated throughout the day and ran out by 7:30. To clear your other comment, we don’t only serve brisket in sandwiches. We serve it in dinner platters called BBQ in Laws. Brisket can also be substituted on other platters when available. The pre tax recommended minimum 18% tip is computed on all checks (no matter party size) via the computer for guest convenience. We appreciate your dining loyalty and look forward to serving you some fresh brisket in the future.
